Slow Cooker Short Rib Stew

- 2 pounds boneless brusk ribs
- 1 tablespoon extra-virgin olive oil or grass-fed butter
- three garlic cloves, minced
- 1 onion, diced
- 4 potatoes, cubed
- 4 large carrots, diced
- two cups Tuttorosso Diced Tomatoes
- v cups beefiness broth
- one tablespoon arrowroot flour
- 1 teaspoon fine sea salt, more to gustation
- 1/two teaspoon black pepper, more than to taste
- Pinch of paprika
- four sprigs fresh thyme
- i bay leafage
- Pinch of red pepper flakes
- Optional: ane loving cup cremini mushrooms
- Optional: 2 parsnips, diced
Instructions
- Trim backlog fat off of the brusque ribs and cut them into small one 1/2 inch bite-size cubes. Season generously with table salt and pepper.
- In a skillet, heat oil or butter and brown brusque ribs on all sides.
- Place garlic, onion, potatoes carrots, and the parsnips and mushrooms if adding, in the bottom of your slow cooker.
- Place meat on peak, and then add in the diced tomatoes, beefiness broth, arrowroot flour, teaspoon of salt, pepper, thyme, bay leaf, and red pepper flakes.
- Set ho-hum cooker to low for 8 hours. Once done, remove thyme sprigs and bay foliage, and add boosted common salt, pepper, paprika, and red pepper flakes as desired.
